As a boy,I learn how to age Muskrats from my uncle, when I noticed after 'rats were fleshed, on boards and drying, the skin side had different patterns.
Found this chart and thought I'd share...

Goose, check your dried 'rats. If you have a lot of juveniles, you have a healthy population.

Goose, the Mink are fleshed just fine. I don't know how to age Mink by their dried skin. My guess is the one on the left is an XL Male, right one is Female?
Your Mink look good, nice job.
In your picture...suggestions...
Pull nose down to just catch end of board, center the eyes and ears on both. Also, center legs.
Plus use a few more pins to get a straight line of back fur (tail side). Pin and pull fur to tail (pleat) to eliminate the loose flaps on edge of board.

Goose, these are old put up pictures. I now pleat the back fur towards the tail and still keep the straight line, uniform look. By drawing back fur towards tail, will give you dense fur at the inspection window (on belly side). The Coon pictured on the left, has pleats, but I now pull a bit more fur to tail and pleats are more pronounced. Pleating is common practice nowadays for Mink and Coon.

;) ;) Pulled my short water line this mornin.... :) :) :) so all told this season: 10 nights in the water = 19 muskrats and 3 mink…not bad for an old guy on a short section of stream....My Christmas present was a nice buck mink in one of the last sets I pulled 8) 8) 8) 8) 8) 8)

;) ;) ;) First time I ever skunned a critter outside in December in my short sleeve T-shirt, should have had my cargo shorts on too :o :o :o All water critters are now put up 8) 8) 8) 8)
