Wild berry liquer/ cordial
« on: June 28, 2009, 02:23:51 PM »
Pick yourself 2-3 lbs black raspberries or blackberries
and place in a clean gallon jar

Add 1 to 2 cups sugar over berries

Cover berries and sugar in a 100 proof vodka

Let sit out of the sunlight for 10 days then shake it up once a day , everyday
for 20 more days.
Strain the mixture and its ready to sip.
This is a fast and easy way to zip up any party or get together

Like a sweet brandy
and the taste of the fresh berries comes through
the taste of the alcohol,
Also great over vanilla ice cream

this sounds great...but is there any hint of the vodka left over? (can't get near the taste or smell of vodka anymore)

Alittle Ben,
But the 100 proof is cut down due to the berry juice, The alcohol sucks the juice from the berries and when its done, the berries are almost white
you still taste the alcohol but not the vodka( if you can understand that)
You could use a pure grain too if you can find it.

Do you losen the lid on the jar so it does not blow up?

No Ernie,
There is no fermentation going on at all.
If there is any natural yeast on the berries, the 100 proof vodka will kill it
